Broccoli salad with cranberries and bacon

Ingredients

1⁄2 cup Plain fat free Greek yogurt

1⁄4 cup Light mayonnaise

1 TbspCider vinegar

1⁄2 tsp Kosher salt

1⁄4 tsp Black pepper

8 cupsBroccoli, chopped, florets (about 1 1/4 lb)

1⁄2 cupReduced sugar dried cranberries

1⁄3 cup Red onion, chopped

1⁄4 cup Toasted sunflower seed kernels

5 slices Cooked crisp center cut bacon, crumbled

Description

Our version of this potluck favorite emphasizes the fresh flavor of the broccoli. Reduced-sugar dried cranberries offer pops of sweetness, and sunflower seeds and bacon round things out with decidedly savory notes.

Directions

In a large bowl, whisk together the yogurt, mayonnaise, vinegar, salt, and pepper. Add the broccoli, cranberries, onion, sunflower seeds, and bacon; toss well to coat.

Serving size: 1 cup

Notes

Though the salad is great served right away, it’s perhaps even better if you make it ahead (up to two days in advance) and let the flavors meld in the refrigerator.
